We all have amazing memories of waking up to the house smelling with the goodness of sweets on a Diwali morning. Though, now-a-days my mom does not put efforts in making sweets at home but she makes sure to fill the table with every possible variety from the market. Tables laden with sweets still excite me the same way as being a kid. This is the reason why I over-indulge in these sweet fantasies.

I am sure many of you are not as crazy as me. I know many friends who keep a strict watch on the calorie intake. And trust me they at times regret not winding up their meal with a dessert. If you also fall in the same category, then this Diwali forget all your worries as Chef Praveen Gonsalves of Barbeque Nation shares his secret recipes of lip-smacking healthy and low-calorie sweets.

Corn And Carrot Kheer

Low Calorie Dessert Recipes

Ingredients
250 gms carrot
½ cup corn kernels
2 cups water
1 tbsp ghee
1 ltr milk
½ cup sugar
15 chopped almonds
15 chopped pistachios
¼ tsp green cardamom powder
1 pinch saffron soaked in 1 tbsp warm milk

Method

  • Wash, peel and grate the carrots. Squeeze extra water and keep aside.
  • Boil water in a medium sauce pot. Add corn kernels and let it boil on a medium flame for 5 minutes. Drain the water and coarsely grind the corns.
  • In a small fry pan dry roast the almonds and pistachios till the time they become crunchy.
  • Mix milk, cardamom powder and saffron in a bowl and keep aside.
  • Take a deep non-stick pan. Pour ghee and add carrots and sugar when it gets heated. Saute the mixture till the raw flavour of the carrot is gone.
  • Pour the mixture of milk, cardamom powder and saffron on the carrots and let it boil. Now add corn mixture and mix it well. Let it cook on a low flame for 5 minutes.
  • Sprinkle roasted almonds and pistachios on the kheer and let it cool down to room temperature.
  • Keep it in refrigerator for one hour and serve chilled.

Custard Apple Kheer

Ingredients
5 custard apples
100 gm jaggery
¼ tsp green cardamom powder
1 cup roasted broken green gram
1 cup coconut milk
1 tbsp almond flakes
1 tbsp pistachio flakes
4 cups water

Method

  • Wash and peel the custard apple. Separate the seeds and pulp. Keep the pulp in the refrigerator.
  • In a pressure cooker add water and roasted broken green gram and cook it till the gram becomes soft and easy to mash.
  • Melt jaggery in a non-stick pan and add cardamom powder to it.
  • Now add cooked broken green gram, custard apple pulp to the jaggery mixture and mix it well. Pour coconut milk over it and bring it to boil.
  • Sprinkle almond and pistachio flakes on the kheer and let it cool down to room temperature.
  • Keep it in refrigerator for one hour and serve chilled.

Dates And Walnut Kheer

Low Calorie Dessert Recipes

Ingredients
1 ltr fresh milk
½ kg deseeded and chopped dates
½ cup sugar
½ cup chopped walnut
3 tbsp oats
4 tbsp chopped roasted almonds
300 ml fresh cream
2 cups water

Method

  • In a non-stick pan add dates and water and cook on a low flame till the dates turn soft. Allow the dates to cool. Then using a blender, make a fine paste adding 100 ml milk to the mixture.
  • Boil the remaining milk in a pan on a low flame. Add sugar and date paste and mix it well.
  • Add oats and half the quantity of crushed walnut and almond and bring to a boil.
  • Cool the mixture and refrigerate it. While serving steer in the cream and garnish with remaining nuts.
